Winter is coming, and we all need a touch more warmth to get us through these chilly, dark days. Throughout the years, I’ve shared many recipes to warm hearts and bellies when the temperature drops, and I’ve compiled a small handful of them here today. There are creamy soups, hearty stews, brothy noodle numbers, and spicy curries to please every palate and mood this season.
Bring out your biggest pot and fill your bowl with something nourishing this winter. Here are 6 of my favourites from Yummy Beet to get you started.
To serve, you can enjoy this delicious, speedy stew in a bowl, just as it’s shown here. But, if you want to gild the lily, spoon the warm stew over toasted sourdough, and then adorn with a poached egg or pillow of Greek yogurt.
White beans add dairy-free creaminess to this thick and substantial pureed parsnip soup. For lunch, I’d serve this up with a radicchio, apple, and walnut salad salad, maybe with a little sheep’s milk feta crumbled overtop (yes, I realize that’s dairy, but who doesn’t love cheese in a salad?).
There are few things I enjoy more than slurping noodles from an intensely fragranced broth. This pho recipe isn’t traditional, but I’m a fan of the way the sweet squash plays against the umami-bomb broth.
The most popular recipe of all time on Yummy Beet happens to be a healthy winter warmer to boot.
Indian style chickpeas recipes are a weekly staple on our dinner menu.
For me, comfort food at its finest is a brothy, savoury chicken (or chickpea, in this case) soup with a ton of backbone. Sweet carrots are a must for me in these soups, ditto herbs, here, in the form of a vibrant mint pesto.
